Recipe: One Pot Rice Cooker Mapo Tofu Rice

This one is for the rice cooker lovers! Did you know you can use your rice cooker to make one pot mixed rice dishes? I found this ‘hack’ via Ian Low, AKA @thesilverchef on Instagram. Once you try this you’ll start coming up with infinite rice cooker one pot ideas.

Ingredients (serves 4)

  • 1 cup jasmine rice

  • 6-8 dried Chinese mushrooms

  • ~200g faux mince (I used Naked Glory here)

  • ~100g soft or silken tofu

  • 2-3 spring onions, finely chopped

  • 1 cup water

  • 1 tbsp Shaoxing wine

  • 1 tbsp light soy sauce

  • 1 tsp sesame oil

  • 1/2 tsp Sichuan pepper

  • Salt to taste

Instructions

  • Rehydrate the Chinese mushrooms in warm water for at least one hour. Drain and slice or chop finely.

  • Place all the ingredients in a rice cooker and press the cook button.

  • When the cooking has finished, mix everything well in the rice pot.

  • Dress with a drizzle of chilli oil when serving.
